Part-time Vegetarians

Ok...so we have a love/hate relationship with Costco. We love that they have amazing prices on great products, but we hate that we can't always finish eating them before they go bad. We came up with a genius way to eat healthier and not waste all the Costco glory. We've become part-time vegetarians!! Here's our first awesome veggie recipe to share with you all.
Crustless Quiche
1 sweet Maui onion, chopped
1 zucchini, diced
2-3 small diced tomatoes, seeds removed
1-2 green onions, chopped
1/2 bell pepper, chopped
(any other veggies you love)
tons of fresh spinach
5 eggs
shredded cheese (we used Monterey, feta and Parmesan)
salt, pepper and garlic
1. Preheat oven to 350* and grease either muffin tins or a pie tin.
2. Saute the onion in some oil. Once they're translucent, add in handfuls of fresh spinach and cook until wilted. Allow mixture to cool.
3. Beat the eggs with spices. Mix in the cheese and the veggies and spoon into muffin tins, or pour into pie tin. Top with extra cheese if you want a little extra yum.
4. Bake for 30 minutes and allow to cool for 10 minutes before diving in!! Nom, Nom, Nom!
We doubled the recipe because it was so gosh darn delicious!!
